The Barthelmé family holdings were pieced together from vineyards across Wettolsheim and neighbouring Haut-Rhin villages, organic since the 1990s and now certified biodynamic. Yields are low, harvest is by hand, and the cellar work is minimal: whole-bunch pressing, wild-yeast ferments and time on lees in old foudres and tank. It's finished dry, with the natural acidity left alone.\u003c\/p\u003e\n\u003cp\u003eTaut, citrusy and stony.
