Edmond comes from the southerly part of the site, where the Saint-Doulchard marls give way to a blanket of weathered limestone rocks known locally as calcaires à astartes. The vines are between fifty and ninety years old and cropped even lower than those for the Génération Dix-Neuf. Fermentation and élevage took place in 600-litre barrels, with a portion raised in a 2,000-litre egg-shaped Taransaud wooden ovum, and the wine spent around twelve months on fine lees. The result is a structured, deeply mineral white with the weight and layering of fine white Burgundy, made in a register that has little to do with the textbook style of the appellation.\u003c\/p\u003e\n\u003cp\u003eThese wines can live twenty to thirty years and generally begin to peak after five to ten.
