Edmond is drawn from the oldest vines on its southerly flank, where the Saint-Doulchard marls give way to weathered limestone rocks known locally as calcaires à astartes. The estate is farmed biodynamically, and yields for this cuvée are cropped lower still than for the Dix-Neuf. Fermentation and maturation take place in 600-litre barrels, with a portion raised in a 2,000-litre egg-shaped Taransaud Ovum, and the wine spends 10 to 14 months on fine lees. The result is a structured, savoury white built on depth and grip rather than the aromatic lift usually associated with the grape.\u003c\/p\u003e\n\u003cp\u003eThese wines rarely peak before five to ten years and can run to 20 or 30.
