This cuvée takes only its oldest vines, at roughly 100 years, and yields are pushed to the lower end of grand cru Burgundy levels. The domaine is farmed biodynamically. The wine fermented and aged for twelve months in 2,000-litre tronconique wooden tanks before a further spell in steel on lees, and only about 500 cases are made each year. With its stablemate Edmond it stands as the antithesis of textbook modern Sancerre: extract-rich and tightly wound, built more like a white Burgundy than a Loire Sauvignon Blanc, yet carrying the racy acid core of a fine Riesling or Chenin. Candied citrus, gingerbread and iodine sit behind that structure.
