The soils are ancient Saint-Doulchard marls, part of the same Kimmeridgian chain that runs through Chablis, and the estate works them biodynamically at low yields. Around half the wine ferments in large wooden fermenters and is raised in oak casks, with the balance fermented and matured in traditional concrete vats before blending. It then ages on fine lees for roughly twelve months, which builds the deep, pulpy texture the cuvée is known for without blunting its drive. The style has more in common with a good Chablis than with the lighter tank-fermented Sancerre most drinkers encounter.\u003c\/p\u003e\n\u003cp\u003eDrinking now and worth five to eight years, longer in this format.
