La Moussière is a gently rolling amphitheatre of very stony, limestone-rich ground on ancient Saint-Doulchard marl, and the Mellot family has long been its emblematic grower. The vineyard is farmed biodynamically and cropped at low yields. Half of the wine ferments in large wooden fermenters and is raised in oak casks, while the balance ferments and rests in traditional concrete vats before the two components are blended. Élevage on fine lees runs for roughly twelve months, which builds the deep, pulpy texture the cuvée is known for. The oak does not blunt the wine's purity; if anything it reads closer to a white Burgundy than to the tank-raised Sancerre most drinkers know.\u003c\/p\u003e\n\u003cp\u003eDrinks well now and will hold for five years or more.
