Alphonse Mellot farms it biodynamically and crops it low, and the wine that results is among the more striking and least typical of Sancerre. Half the crop is fermented in large wooden fermenters and raised in oak casks; the balance is fermented and raised in traditional concrete vats, and the two are blended afterwards. All of it spends roughly 12 months on fine lees, which is where the wine’s depth of texture comes from. The oak is handled in a way that does not compromise the purity or energy of the fruit.
