Mellot’s farming there is biodynamic, hand-tended and low-cropping, and the combination of soil and viticulture gives a Sancerre that sits apart from the appellation norm. Half the wine ferments in large wooden fermenters and is raised in oak casks; the balance ferments and is raised in traditional concrete vats before the two are blended. It then ages on fine lees for around 12 months, which builds the deep, pulpy texture the wine is known for. The half-bottle format suits a white of this weight.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and holding five to eight years.
