It is high, rocky and cold, and ripens late, though its south-facing aspect offsets the altitude to a degree. The white clay and limestone soils here tend to give bright red fruit, racy acidity and a fine, powdery structure rather than weight. Jobard's parcel, historically known as the Clos des Montrevenots, runs to 1.4 hectares, but only a small part of it produced this wine: he is replanting most of the site with mass-selection cuttings, including some Chardonnay, so the cuvée is very small at present. The vines used are forty-five years old. All the bunches were destemmed and given a week-long cold soak before fermentation, and the wine saw very little new oak before bottling after twelve months on lees.\u003c\/p\u003e\n\u003cp\u003eDrink from two or three years and over the following decade, with roast poultry, veal or grilled mushrooms.
