Jobard's 0.7-hectare parcel of 35-year-old vines lies in Genevrières Dessous, next to the cabotte, the little stone workers' hut that gives the vineyard its most recognisable landmark. He attributes the purity and intensity of the wine to his plant material, a mass selection taken in the 1960s, noting that the berries here are always well formed, never under- or over-ripe, with balanced pH and high natural acidity. Winemaking is conservative and slow, with whole-bunch pressing, indigenous-yeast fermentation and a long élevage in barrel with modest new wood.
