Auguste Clape took the family vines in hand after the Second World War, at a point when much of Cornas was being abandoned for easier farming, and became the reference point for the appellation; the domaine is now run by later generations of the family. The winemaking is deliberately old fashioned, with fruit from several parcels fermented largely with whole bunches and raised in old foudres and demi-muids, with no new oak and as little handling as possible before bottling.\u003c\/p\u003e\n\n\u003cp\u003eBuilt to age and worth a decade or more in the cellar, this is a wine for slow cooked beef, game or aged cheese; decant and serve at around 17 degrees.\u003c\/p\u003e\n\n\u003cp\u003e\u003cem\u003e*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
