Baudry planted here between 1993 and 2000, and the parcel also holds what is left of the estate's ungrafted vines, which once went into a separate Franc de Pied cuvée and are now blended in. The vineyards are farmed organically. Harvesting is by hand and yields never exceeded 40 hectolitres per hectare. Fermentation took place in large wooden fermenters with regular pigeage for gentle extraction, and after around twenty days on skins the wine was pressed off and matured twelve months in lightly seasoned oak barrels, then nine months in cement, and bottled without filtration. Matthieu Baudry describes it as a very pure expression of Chinon.\u003c\/p\u003e\n\u003cp\u003eRewarding five to twelve years in the cellar.
