Domaine Bernard Defaix holds eight hectares within it, more than any other grower, and its cellars sit at the foot of the Léchet hill; as much as any pairing in Chablis, the cru and the estate have become synonymous, with Didier Defaix its emblematic vigneron. He is also the only grower on the slope farming to certified organic standards. A quarter of the wine was fermented and matured in old, neutral barrels that had previously held the domaine’s old-vine Réserve bottling from the same site, the remainder staying in tank.
