Domaine Bernard Defaix holds nine hectares here, the largest single holding in the cru, and its cellars sit at the foot of the hill. Alongside the standard Côte de Léchet, the family bottles this Réserve from one hectare of old vines on the mid-slope, the intention being to show what that vine age adds in layering and depth. Half the wine matures in tank and half in wood, mainly 228-litre used Burgundian pièces passed on from Jaeger-Defaix in Rully. It rests twelve months on fine lees with regular bâtonnage before the two portions are blended, and is bottled eighteen months after harvest under a Diam closure.\u003c\/p\u003e\n\u003cp\u003eDrinking now and worth eight years or more in bottle.
