The Defaix family are based at Milly, and this village bottling is drawn from four parcels of thirty-plus-year-old vines around Milly and Poinchy on the left bank of the river, opposite the Grand Cru slope. The fruit is certified organic. The wine was fermented with wild yeasts and aged on fine lees for ten months in glass-lined tanks, so there is no oak involved at any stage; the lees work builds a little texture without softening the line. It is sealed under screwcap, which suits a wine of this style for the Australian market.\u003c\/p\u003e\n\u003cp\u003eDrink now and over the next four years.
