Domaine Bernard Defaix is based at Milly, beneath the Côte de Léchet on the left bank of the Serein, and is certified organic. This village bottling draws on four parcels of mature vines on the slopes around Milly and Poinchy. Fermentation runs on wild yeasts and the wine is aged for ten months on fine lees in glass-lined tanks, so no oak comes between the drinker and the site; whatever texture the wine carries comes from that lees contact. It is sealed under screwcap.\u003c\/p\u003e\n\u003cp\u003eReady on release and best over the next three to four years.
