The vines are mature, comfortably past 30 years, and that age is the main difference between this wine and the estate’s Petit Chablis: more depth, more grip and more restraint. Fermentation is spontaneous and the wine then spends 10 months on fine lees in glass-lined tanks, a vessel choice that adds texture without any oak character.
