The domaine is based at Milly, beneath the Côte de Léchet, where Bernard Defaix planted his first vines in the 1950s and 1960s; it now farms around twelve hectares, eight of them in Côte de Léchet, and moved to certified organic farming from 2008. Most of the whites are raised in stainless steel, but the Grand Cru is fermented and aged in oak barrels of one to five years with regular lees stirring, allowed to throw its tartrates over winter, and lightly filtered after eighteen months.\u003c\/p\u003e\n\u003cp\u003eWorth two or three years in bottle and capable of a decade.
