This cuvée comes from a single parcel of 40-year-old vines in Milly, close to the cellar, which Didier Defaix says reliably gives fruit with enough structure to carry a zero-sulphur approach. Fermentation is with indigenous yeasts in stainless steel, handling is kept to a minimum, and the wine is bottled without fining or filtration. It is also bottled with a little more dissolved carbon dioxide than usual, which acts as a natural preservative. The result sits apart from the estate's standard Chablis: rounder and juicier, with a softer line and traces of fermentation still showing.
