The Defaix domaine was founded at Milly in 1959 by Bernard Defaix and is now in the hands of his sons Sylvain and Didier, with Didier's wife Hélène. Its Petit Chablis parcels lie above Vaillons, across the valley from the estate's home slope at Côte de Léchet, and the whole estate has been certified organic by Ecocert for about fifteen years. Fermentation runs on natural yeasts and the wine is kept in temperature-controlled tank, with no oak and no lees stirring.\u003c\/p\u003e\n\u003cp\u003eDrink young, within two or three years.
