Domaine Bernard Defaix farms about 27 hectares from Milly, immediately below the Côte de Léchet hill, with Didier Defaix in the vineyards and his brother Sylvain in the cellar. Organic conversion started in 2008 with Ecocert certification, which lapsed in 2016 after mildew forced conventional treatment. Fermentation is on natural yeasts, malolactic follows unforced, and the wine is raised in stainless steel with no oak.\u003c\/p\u003e\n\u003cp\u003eDrink young, within two or three years of the vintage.
