Domaine Bernard Defaix sits at Milly at the foot of the Côte de Léchet, and the greater share of this cuvée comes from a well-placed parcel of Kimmeridgian soil on the slopes above Milly and Vaillons. It is a cool site, which is a liability in lean years and an asset in warm ones. Small parcels at Poinchy and Beines have since been added to fill out the volume. The wine ferments with indigenous yeasts and is raised in glass-lined tank with no wood at any stage, then bottled under screwcap, all of which keeps the fruit direct and the finish clean.\u003c\/p\u003e\n\u003cp\u003eBest over the next two to three years.
