The fruit comes from a terroir called Le Creux de Sabon, not far from the Château de Comblanchien, though Camille Thiriet chose to name the wine after an early benefactor instead — partly in tribute and partly because it is easier to say. The vine age is the striking thing here: ninety years, at the top of the slope. Fermentation used 100 per cent whole bunches and a portion of the wine was matured in stainless steel rather than wood, a deliberate move to hold on to the vineyard’s delicate floral aromatics. Red and blue fruit run through it with a good deal of stem spice, and the length is well beyond what the appellation would suggest.\u003c\/p\u003e\n\u003cp\u003eDrinkable now, better in three years and sound for a decade.
