Domaine Cauhapé sits above Monein, where Henri Ramonteu built the estate up to some forty hectares of Gros Manseng and Petit Manseng on clay and silex. The dry foehn wind off Spain shrivels the berries on the vine rather than encouraging botrytis, so the sweet wines are made by passerillage, picked in successive passes from October through to January. Geyser is a dry cuvée rather than a late-picked one, taking Gros Manseng for structure and acidity, Petit Manseng for weight and Camaralet for its aromatic lift, and it is raised with lees contact to give texture without masking the varieties.\u003c\/p\u003e\n\n\u003cp\u003eDry, textural and firmly acidic, it suits shellfish, chicken with cream sauces and the sheep's milk cheeses of the Pyrenees; serve at 10 to 12 degrees.\u003c\/p\u003e\n\n\u003cp\u003e\u003cem\u003e*Every effort is made to ensure the current vintage is accurate; however, variations can occur.
