Domaine Cauhapé sits above Monein, where Henri Ramonteu built the estate up to some forty hectares of Gros Manseng and Petit Manseng on clay and silex. The dry foehn wind off Spain shrivels the berries on the vine rather than encouraging botrytis, so the sweet wines are made by passerillage, picked in successive passes from October through to January. Symphonie de Novembre is the November pass, when the foehn has shrivelled the berries further and residual sugar reaches around 75 grams per litre.
