Chermette has been a leading voice for traditional Beaujolais for decades, making wine with minimal intervention and low sulphur at a time when neither was fashionable. The method for Les Griottes has not changed in that time: traditional whole-bunch, semi-carbonic fermentation in concrete tanks, followed by maturation in a combination of tank and ancient oak casks that contribute no new-wood character.
