The fruit comes from Gamay vines of thirty to forty years, and where Chermette's Moulin-à-Vent and Fleurie bottlings are made for the cellar, Les Griottes is aimed squarely at early drinking: light to medium-bodied, bright and cherry-fruited. The winemaking has not changed in decades, with traditional whole-bunch, semi-carbonic fermentation in concrete tanks followed by maturation in tank and old oak casks. Nothing here obscures the fruit, and the half-bottle format suits a wine made for the table rather than the cellar.\u003c\/p\u003e\n\u003cp\u003eDrink it now and over the next two or three years, lightly chilled, with charcuterie, roast chicken or a simple tomato pasta.
