Where the domaine’s Moulin-à-Vent and Fleurie are built for the cellar, the intention here is something light to medium-bodied, bright and cherry-fruited. The winemaking has been unchanged for decades: whole-bunch, semi-carbonic fermentation in concrete tanks, then maturation in a combination of tank and old oak casks, with no new wood involved.
