Unchaptalised, wild-fermented, low in sulphur and unfiltered, it stood apart from the industrial Beaujolais of the period and reset expectations for what non-cru Beaujolais could be. The fruit comes from four densely planted hectares at Saint-Vérand, rooted in a pocket of dark granite, and the vines range from 35 to 85 years old — the two facts that account for a depth and mineral grip normally reserved for the crus. Fermentation follows the house pattern of whole bunches in concrete, with maturation split between tank and old casks.
