Organic growing has long been the rule here and certification followed, with soil scientist Claude Bourguignon consulting on the vineyard for many years. This bottling was picked and vinified by Jacques Devauges but bottled under Alessandro Noli, who has since directed the estate. Nine separate cuvées were fermented, spending an average of eighteen days in vat, with extraction kept deliberately gentle: only four punchdowns, all by foot. The final blend ran to roughly 65 per cent whole bunches and was raised for nineteen months, 80 per cent in new lightly toasted Tronçais barriques and the balance in one-year-old barrels and demi-muids. As always the wine was hand-bottled by gravity, unfined and unfiltered.\u003c\/p\u003e\n\u003cp\u003eA wine for the cellar that will reward ten to twenty years.
