Bouland’s version has rather more to it than that. The Chatenay parcel is a steep, ridged incline planted to 35- to 45-year-old vines on the granite and sandstone soils typical of the cru; sheltered by a nearby forest, it is a warm site despite facing north. Bouland works as a traditionalist across his range, with old vines, low yields and whole-bunch fermentation on indigenous yeasts, and his wines carry a density unusual for the region.\u003c\/p\u003e\n\u003cp\u003eDrinking now and over the next four or five years.
