Cailloux means stones, and the site is exactly that: plenty of schist running through a granitic, sandy base, much as at Côte du Py. The surface rock traps and radiates warmth, which is why this is typically Bouland’s earliest-ripening parcel. The vines were planted in 1937, 1951 and 1967 on 420A rootstock, chosen for very stony ground with no topsoil. Winemaking follows the domaine pattern of natural, whole-bunch fermentation with no fining. The wine is deep and inky, with creamy red cherry and blue fruit flecked by graphite and earthy spice, and more grip at this stage than the Sable cuvée.\u003c\/p\u003e\n\u003cp\u003eWorth two or three years and good for a decade.
