The Sable side is weathered sandy granite on the steeper slope, planted to vines of 40 to 50 years grafted onto Vialla, a low-yielding rootstock well suited to sandy, granitic and deep argilo-siliceous soils. As everywhere at the domaine, yields are low, fermentation is natural and whole-bunch, and the wine is bottled without fining. Tasted alongside the Cailloux, Sable is the more giving of the two, broader through the palate with juicier tannins, while keeping the mouth-watering energy and drive that runs through the range.
