His Bellevue vines are divided into two wines, one from the sand and one from the stones, the parcels separated only by a narrow track yet quite different underfoot. This is the sand cuvée, grown on weathered granitic sand on a steeper section of slope, from vines of 40 to 50 years planted on Vialla rootstock, a low-yielding stock well suited to sandy granitic and deep silty-clay soils. Winemaking follows the domaine's usual pattern of very low yields, whole-bunch fermentation with indigenous yeasts and no fining.
