Bouland's holding there is divided into two cuvées according to what lies underfoot: Sable for the sand, Cailloux for the stones. The two parcels are separated only by a small track, yet as Bouland points out the soils are completely different. The Sable parcel is weathered sandy granite on a steeper slope, planted with 40 to 50-year-old vines on Vialla rootstock, a low-yielding stock well suited to sandy, granitic and deep clay-silica soils. Winemaking is unchanged across the range: low yields, natural whole-bunch fermentation and minimal handling. Tasted beside the Cailloux, the Sable is the more giving of the two, broader in the mouth with juicier tannins.\u003c\/p\u003e\n\u003cp\u003eGood now and for five to eight years, it suits roast duck, charcuterie or a mushroom ragout.
