The result is more perfume and finer, rounder tannin. Daniel Bouland separates his younger vines here — a relative term, since they average 60 years — from the oldest bush vines, which go into the Vieilles Vignes bottlings. As with everything at the domaine, the fruit is fermented as whole bunches with indigenous yeasts and the must is foot-trodden towards the end to prolong the ferment. This is the most red-fruited and floral of the Corcelette trio, savoury rather than plush, and there is enough powdery tannin under the fruit to carry it well beyond early drinking.\u003c\/p\u003e\n\u003cp\u003eApproachable young but worth three to five years in the cellar.
