This cuvée takes the granitic sand — sable means sand — while its sister wine, Cailloux, comes from the rockier ground alongside. The vines here date from 1926, so this is a Vieilles Vignes bottling in the fullest sense of the term, and the yields are correspondingly tiny. Where the sand ordinarily brings roundness and a Burgundian texture, the age of these trunks adds concentration on top of it. The wine is raised in an old foudre rather than in concrete, which suits its scale: it comes out layered, inky and mouthcoating, with genuine finesse, and finishes on intense mineral character and a nip of old-vine grip.\u003c\/p\u003e\n\u003cp\u003eGive it two or three years and drink across the following decade.
