Sable, meaning sand, is the sister bottling to Bouland’s Cailloux, which comes from the rockier ground within the same climat, and the pair make a straightforward demonstration of what soil does to Gamay. The vines here went in during 1926, so this is a Vieilles Vignes cuvée in the fullest sense, and the crop those gnarled old trunks carry is correspondingly small. The wine was raised in an old foudre. As across the range, Bouland ferments whole bunches with indigenous yeasts and adds nothing in the way of new oak.\u003c\/p\u003e\n\u003cp\u003eDrinking now and capable of eight to ten years.
