Daniel Bouland bottles his Corcelette holdings separately by soil, and this is the sand cuvée — sable means sand — the sister wine to the stonier Cailloux. The vines were planted in 1926, so the Vieilles Vignes on the label is meant literally. Fermentation is whole-bunch with indigenous yeasts, the cap trodden by foot late in the process to draw the ferment out, and the wine is raised in old foudre, so there is no new oak. Yields from the old trunks are naturally small.\u003c\/p\u003e\n\u003cp\u003eEnjoyable now but built to reward five to eight years in the cellar.
