He splits his holding here into two cuvées: an old-vine bottling raised in foudre, and this younger-vine version raised in concrete, which keeps the fruit bright and unmarked. The vines were planted in 1978 and 1980 in the deep granitic sand typical of Les Délys, a soil that brings roundness and an almost Burgundian texture to the wine. Fermentation follows Bouland’s usual pattern of low yields and natural, whole-bunch vinification. The wine is refined and immediately drinkable, with succulent wild berry fruit and a nettle-like spice, closing on a vibrant, racy note with just a hint of tannin.\u003c\/p\u003e\n\u003cp\u003eDrinking well now and holding for five or six years.
