The red is the more perfumed and finer-framed of the two monopoles, where the Clos des Forêts is the sterner. Fermentation runs on indigenous yeasts with a high proportion of whole bunches, extraction is by gentle infusion, and the wine is matured in barrel with restrained new oak, all of which suits a site that gives lift and florality rather than mass.
