Domaine de l'Arlot has a parcel of white varieties inside its monopole Clos de l'Arlot at Prémeaux-Prissey, on the steep, shallow limestone of the terraced upper part of the clos. The blend is led by Chardonnay with a share of Pinot Gris, the old Burgundian Pinot Beurot, which adds breadth and a faintly spicy edge. The fruit is pressed in whole bunches, fermented and aged in barrel with a small proportion of new wood, and left on its fine lees for texture rather than for any obvious oak character.\u003c\/p\u003e\n\u003cp\u003eIt drinks well young but gains complexity with a few years in bottle.
