The slope here is rocky and steep enough that machinery cannot be used, so everything from pruning to picking is done by hand. The wine is fermented with indigenous yeasts and aged for twelve months in French oak, 20 per cent of it new, followed by a further three months in vat before bottling, which gives it breadth without leaving an obvious mark of the barrel. It is among the least known of Burgundy’s serious whites and, in the hands of Géraldine Godot, one of the more consistent.\u003c\/p\u003e\n\u003cp\u003eGood on release and worth keeping for eight to ten years.
