The sections are picked and fermented apart and blended later, which gives the wine both weight in the middle and a firm edge. It is the more structured of Domaine de l'Arlot's two monopoles. Fermentation uses indigenous yeasts and a good share of whole bunches, extraction is by gentle infusion, and the wine matures in barrel with a measured proportion of new oak. In magnum the ratio of wine to oxygen is more favourable, so the wine evolves more slowly and generally holds its freshness for longer.\u003c\/p\u003e\n\u003cp\u003eA format worth cellaring; give it several years and decant before serving.
