Domaine de l'Arlot picks and ferments the sections separately and assembles them afterwards, which is how the wine gains both flesh and frame. Of the estate's two monopoles this is the sterner and more tannic, where the Clos de l'Arlot is the more delicate. Winemaking follows the house pattern: indigenous yeasts, a good proportion of whole bunches, gentle infusion-style extraction and maturation in barrel with a modest share of new oak. It is built for the cellar rather than for early drinking.\u003c\/p\u003e\n\u003cp\u003eBest given several years in bottle, though an hour in a decanter helps if opened young.
