Jean-François Malsert farms at Sécheras, on the higher ground behind the river, and works with a natural leaning in the cellar — minimal intervention, ambient yeasts and very little sulphur. The Rodéo cuvée comes from pure gneiss, a hard metamorphic rock that gives poor, free-draining soil, and the altitude keeps the acidity intact in a warming region. The wine is raised in amphora rather than barrel, and there is enough skin contact to give it a pulpy, faintly grippy texture. Yellow apple skin, dried herbs and a stony edge lead the palate before tension takes over and drives a tangy, citrus-inflected finish, with white florals behind. It is a white built for the table rather than for sipping.\u003c\/p\u003e\n\u003cp\u003eDrinking now and good for three to five years.
