Aux Craz is a south-facing vineyard under the Col de Durbize at the top of the village, where the soils are poor and thin over granite, forcing the roots of Céline Passot's 40-year-old vines into the rock beneath. The altitude and cooler microclimate slow ripening and keep the fruit crisp and defined. Winemaking follows the pattern of the domaine's other cru bottlings, with eleven months of maturation in concrete cuve and no oak before bottling.
