It is made as a vin doux naturel: neutral grape spirit is added to arrest the ferment, preserving the grape's own sugar and raising the alcohol to around 15 per cent. The only variety permitted is Muscat a Petits Grains, grown in both white and darker berried selections, and it is unusual in giving a wine that smells distinctly of the fresh grape. Domaine de la Pigeade is a specialist of the appellation.
