Vines went in from 2011 on sandy, granitic soils, and the slopes were shaped into terraces in keeping with local farming tradition. The nearby Yellow Sea brings a maritime influence, and because each terrace ripens at its own pace, the grapes are hand-picked in several rounds. For 2022 the blend brings together Cabernet Franc, Marselan and Cabernet Sauvignon. Each variety is vinified separately in temperature-controlled steel tanks, and only the best lots are chosen for the final blend, which is aged in French oak from the family's cooperage before bottling.\u003c\/p\u003e\n\u003cp\u003eGive it time in the glass, or a short decant, and serve at 16 to 18 degrees. Peking duck, slow-cooked lamb shoulder or beef with black bean sauce all work well.
