Colombard, Folle Blanche, Baco and Ugni Blanc are fermented dry without sulphur and distilled once, at low strength, so far more of the grape survives than in a double-distilled brandy. At least five years in oak then softens the spirit and adds colour and a touch of vanilla, and it's bottled at 49 per cent.\u003c\/p\u003e\u003cp\u003eVigorous and dry, with orchard fruit and a warm oak finish, and it carries its strength well.
